So I decided to give this recipe a shot after having the best chocolate avocado muffins a few years back. Unfortunately I wasn’t able to get recall the recipe so I scoured the web for it. I remember they didn’t taste that great when they were fresh out of the oven, but taste absolutely amazing the next day! The avocado really brings out the flavour. Make sure you eat them cold!
I didn’t have some of the ingredients needed so I added some substitutes (maybe that’s why they came out a little dense). I used honey and vanilla fortified soy milk, The only thing I’d do differently with this recipe is add some more coconut oil as they were a little bit too dense.
All in all, I’m a very happy camper. Yum!
